Most Americans have never heard of the so-called “Save Our Bacon Act.” That’s exactly how its supporters want it.
Buried within the massive federal Farm Bill now moving through Congress, the proposal sounds harmless, even humorous. But behind the catchy name lies a sweeping effort to strip states of the ability to set certain standards for agricultural products sold within their borders – including standards supported by millions of consumers.
The bill’s backers argue the measure is necessary to stop states like California from imposing animal-confinement standards on pork sold within their borders. They claim such laws create a patchwork of regulations for producers. But the answer to differing state standards should not be for Washington to erase them altogether.
